No pictures with this post, but I made a great Turkey and Black Bean Chili for Brady and I. It was super quick and easy which is always a plus.
Ingredients:
1.5 lbs ground turkey
1 red onion chopped
1 red bell pepper chopped
3 cloves fresh garlic chopped
2 jalepenos diced
1 28 oz. can whole or diced tomatos
1 8 oz. can tomato sauce
1 16 oz. can of black beans, rinsed and drained
1 package of chili seasoning (we used the mild)
In a large pot combine turkey, onion, peppers, jalepenos, garlic, and spices. Add a little water to allow for the spices to mix in. Cook until turkey is no longer pink, and onions are somewhat soft.
Stir in tomatos and sauce and bring to a boil. Then reduce heat, add black beans and cook uncovered for about 5-10 minutes longer.
Top with plain Greek yogurt and crumbled torilla chips.
